A Dip That Brings the Heat and the Culture

This ain’t your average dip—this is a bold, creamy, and spicy remix of a classic. The Jerk Chicken & Sausage Spinach Rotel Dip blends jerk-seasoned chicken, zesty Rotel tomatoes, Velveeta, and Italian sausage for a flavor bomb you won’t forget.

It’s a true Caribbean-Southern fusion made for the Black food community—flavor-packed, heat-balanced, and best served with Flamin’ Hot Nacho Doritos. Every bite is rich, savory, and spiced just right.


Ingredients

For the Jerk Chicken

  • Boneless chicken thighs
  • 1 orange bell pepper, thinly sliced
  • Caribbean jerk seasoning mix
  • Caribbean jerk marinade
  • 1 tbsp mild jerk paste

For the Dip Base

  • 1 lb block Velveeta cheese
  • 2 blocks cream cheese
  • 1 cup chopped spinach (fresh or thawed frozen)
  • 1 can HOT Rotel tomatoes
  • 1 can MILD Rotel tomatoes
  • 1–2 tbsp diced jalapeños (optional, Mt. Olive brand)

For the Meat Mix

  • 1 lb mild ground Italian sausage

Step-by-Step Instructions

1. Marinate and Cook the Jerk Chicken

  • Season chicken thighs with jerk seasoning, marinade, and paste.
  • Marinate overnight, then cook covered until tender and thickened.
  • Shred into bite-sized pieces.

2. Cook the Sausage

  • Brown the mild Italian sausage in a skillet over medium heat, then drain the grease.

3. Start the Cheese Base

  • In a large pot or slow cooker, melt Velveeta, cream cheese, and both cans of Rotel over low heat, stirring occasionally.

4. Mix in the Meats

  • Add the cooked sausage and shredded jerk chicken to the pot and stir until evenly combined.

5. Let It All Melt Together

  • Simmer on low for 10–15 minutes.
  • Stirring frequently, until the dip is smooth, thick, and creamy.

6. Serve with Heat

  • Spoon into a serving bowl and serve hot with Flamin’ Hot Nacho Doritos or your favorite chips, garnished with jalapeños if desired.
