A Soulful, Flavor-Packed Seafood Delight

When it comes to seafood, nothing hits quite like a beautifully seared scallop. That golden crust, the tender, buttery inside—pure perfection. But we’re taking things up a notch with Cajun seasoning and a rich lemon butter sauce to add that signature kick. If you love bold flavors and easy gourmet meals, this one’s for you.

Scallops are a delicacy that cooks in minutes, making them perfect for both weeknight meals and impressive date-night dinners. Pair them with your favorite side—creamy grits, garlic mashed potatoes, or a simple asparagus salad—for a plate that looks straight out of a five-star kitchen.

Ingredients

For the Scallops:

  • 1 lb fresh sea scallops (about 12)
  • 1 tsp Cajun seasoning (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp avocado oil (or any high-heat oil)

For the Lemon Butter Sauce:

  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • ½ lemon, sliced for garnish

Instructions

Step 1: Prepare the Scallops

  • Pat the scallops dry with a paper towel to remove excess moisture. This step is key to getting that perfect golden-brown sear.
  • Season one side of the scallops with Cajun seasoning, salt, and black pepper.

Step 2: Make the Lemon Butter Sauce

  • In a small saucepan over medium heat, melt butter.
  • Add garlic, thyme, and parsley, letting it cook for about 1 minute until fragrant.
  • Squeeze in fresh lemon juice, then remove from heat and transfer to a small ramekin to keep warm.

Step 3: Sear the Scallops

  • Heat a cast-iron skillet over high heat and add avocado oil.
  • Once the oil is hot, place scallops seasoned-side down in the pan. Let them sear undisturbed for about 2 minutes until a golden-brown crust forms.
  • While they cook, season the other side with more Cajun seasoning.
  • Flip and sear the other side for another 1-2 minutes.

Step 4: Serve & Enjoy

  • Remove scallops from the pan and drizzle them with the warm lemon butter sauce.
  • Garnish with lemon slices and extra parsley.
  • Serve immediately with your favorite side, and enjoy!

Pro Tips for the Perfect Sear

  • Moisture is the enemy! Pat your scallops dry before seasoning to ensure a golden crust.
  • Use high heat. A screaming hot pan is key to locking in flavor and achieving that crisp exterior.
  • Don’t overcrowd the pan. Cook in batches if needed so each scallop gets a proper sear.
  • Fresh is best! If possible, opt for dry-packed sea scallops rather than wet-packed, which can hold excess water.
