We’re talking tender, perfectly seared ribeye strips swimming in the creamiest, most indulgent garlic mushroom sauce you’ve ever tasted.

The best part? It’s still a one-pot wonder that comes together in no time, making it perfect for those weeknights when you want something special without all the fuss. Pile it high over buttery egg noodles and prepare for that soul-warming, belly-hugging satisfaction that only stroganoff can deliver.


Ingredients

For the Star of the Show (The Beef)

  • 1 lb ribeye steak, sliced into ¼-inch strips
  • Salt & black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp avocado oil (plus more for searing)
  • ½ tsp baking soda (the secret weapon)

  • 2 tbsp butter
  • 1 yellow onion, diced
  • 8 oz mushrooms, sliced thick
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 1 tbsp Dijon mustard
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • Salt & pepper, to taste

To Complete the Experience

  • 12 oz egg noodles, cooked to perfection
  • Fresh parsley, chopped for that pop of color

Step-by-Step Instructions

1. Get That Beef Ready

  • Toss ribeye strips in a bowl with salt, pepper, garlic powder, and onion powder.
  • Add Worcestershire, soy sauce, and avocado oil; mix well.
  • Sprinkle in baking soda, stir again, and let it rest.

2. Sear Like a Pro

  • Remove to a plate, saving the juices.
  • Heat avocado oil in a large skillet over medium-high heat.
  • Sear beef strips for 1 minute per side until golden but tender.

3. Build That Flavor Base

  • In the same skillet, melt butter.
  • Add diced onions and cook for 3–4 minutes until softened.
  • Stir in mushrooms and cook until browned.
  • Add garlic and thyme; cook until fragrant.
