A Weeknight Classic Reinvented with a Kick

This Hamburger Helper with a Taco Twist by Kiana Gray (@_cookingwithkiana) is comfort food with flavor and flair. It takes the nostalgic, creamy skillet pasta we grew up on and flips it with bold taco spices, fire-roasted tomatoes, jalapeños, and Colby cheese. The result? A one-pan dinner that’s smoky, cheesy, and layered with the perfect amount of heat.

It’s the kind of meal that feels homemade but quick — ready in under 30 minutes, full of color, and guaranteed to please the whole family. Whether you’re cooking for kids or spicing up your weekly meal rotation, this dish turns an everyday favorite into something unforgettable.


Ingedients

Base Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • ½ onion, diced
  • 1 jalapeño, chopped
  • 3 cloves garlic, minced

Seasoning & Sauce

  • 1 can (14.5 oz) fire-roasted tomatoes
  • 1 tsp chicken bouillon
  • 1 cup pasta water (reserved from cooked shells)
  • ½ cup heavy cream
  • 2½ cups Colby cheese, shredded
  • Taco seasoning, to taste (or mix chili powder, cumin, paprika, garlic powder, and cayenne)
  • Salt and pepper, to taste

Pasta

8 oz medium shell pasta, cooked al dente


Step-by-Step Instructions

1. Sauté the Veggies

  • In a large skillet, heat olive oil over medium heat.
  • Add bell peppers, onions, and jalapeños.
  • Sauté until softened and fragrant, about 3–5 minutes.

2. Cook the Beef

  • Add garlic and ground beef to the skillet.
  • Cook until the beef is browned and fully cooked, breaking it apart as it cooks.
  • Drain any excess grease if needed.

3. Build the Sauce

  • Season with taco spices, salt, and pepper.
  • Stir in fire-roasted tomatoes and chicken bouillon.
  • Pour in pasta water and let simmer for 5 minutes to allow the flavors to blend.

4. Add the Cream and Cheese

  • Lower the heat and add heavy cream and Colby cheese, stirring until the cheese begins to melt into a smooth, creamy sauce.

5. Combine with Pasta

  • Add in the cooked shell pasta, stirring until each shell is fully coated in the sauce.
  • Simmer on low for 2–3 more minutes, allowing the cheese to melt completely and the sauce to thicken.

6. Serve

  • Spoon into bowls and top with extra cheese, sliced jalapeños, or fresh cilantro for garnish.

  • Add heat: Include extra jalapeños or a dash of hot sauce for more spice.
  • Make it creamy: Use Mexican crema or sour cream instead of heavy cream for a tangy twist.
  • One-pan version: Boil the pasta directly in the sauce for fewer dishes.
  • Top it up: Finish with diced avocado, lime juice, or crushed tortilla chips for crunch.
