Bright, Fragrant, and Straight-Up Delicious

If you’ve never had curry rice like this, you’re in for a treat. This Curry Rice (aka Yellow Rice) is a flavorful one-pot wonder that brings the color, the creaminess, and the comfort. Infused with curry powder, coconut milk, fresh herbs, and just enough heat, every spoonful is rich, fragrant, and cooked down with care.

Whether served as a side dish or the main event, this rice doesn’t play the background. It’s hearty, vibrant, and comes together with ingredients you probably already have in your kitchen. Serve it up with jerk chicken, fried plantains, or just a fork and some quiet time. You deserve this.


Ingredients

  • 1 tbsp oil
  • 1 tsp curry powder
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 scallions, chopped
  • ½ cup sweet peppers, mixed colors, chopped
  • ½ cup carrots, finely chopped
  • 2 cups rice
  • 1 can coconut milk
  • Water (enough to cover rice)
  • 1 chicken bouillon cube
  • All-purpose seasoning (to taste)
  • 1 Scotch bonnet pepper (whole)
  • 1 tbsp butter
  • Fresh thyme sprigs
  • Salt (a pinch)

Step-by-Step Instructions

Step 1: Build the Flavor Base

  1. Heat oil in a large pot over medium heat.
  2. Add the curry powder and ā€œburnā€ it for 1 minute, stirring constantly to release flavor.
  3. Toss in the onion, garlic, scallions, sweet peppers, and carrots. Stir everything around for 2–3 minutes until softened.

Step 2: Add Rice and Toast

  1. Add the rice to the pot and stir well so it becomes coated in the curry and veggie mixture.
  2. Continue stirring until the rice turns yellow and fragrant.

Step 3: Pour and Season

  1. Add the can of coconut milk and enough water to fully cover the rice.
  2. Drop in the bouillon cube, all-purpose seasoning, whole bonnet pepper, butter, thyme, and a pinch of salt.
  3. Stir gently, making sure the pepper stays whole to avoid too much heat unless you want the kick.

Step 4: Steam It Down

  1. Cover the pot with a lid and steam over medium heat.
  2. After about 15–20 minutes, check the rice. Stir lightly and add more water if you prefer a softer, mushier texture.
  3. Continue to steam until the rice is tender, fluffy, and rich with flavor.

Pro Tips & Serving Suggestions

  • Use basmati or jasmine rice for extra fluff and aroma.
  • Want more heat? Pierce the bonnet pepper halfway through cooking to let the spice release.
  • Pairs beautifully with jerk chicken, stewed oxtail, or curry shrimp.
  • Add green peas or corn for extra texture and color.
