These Apple Fritter Cookies taste like your favorite bakery-style fritters baked into soft, chewy cookies. Fresh red apples are diced, cooked down with brown sugar and butter until caramelized, then folded into a buttery cookie batter that melts in your mouth.

Drizzled with a sweet vanilla glaze, each cookie captures the cozy aroma of cinnamon apples and brown sugar—perfect for chilly mornings, fall gatherings, or any time you want a comforting homemade treat that feels like a hug.


Ingredients

For the Caramelized Apples

  • 2 red apples, peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar

Step-by-Step Instructions

1. Caramelize the Apples

  • In a skillet, melt butter over medium heat.
  • Add diced apples and brown sugar.
  • Cook until the apples soften and the mixture turns golden and syrupy.
  • Set aside to cool slightly.

2. Make the Cookie Batter

  • In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  • In a separate bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  • Add egg and vanilla extract, mixing until combined.
