Ingredients

  • 1 red bell pepper, chopped
  • 2 green bell peppers, chopped
  • 1 onion, peeled and quartered
  • 6 scallions (green onions), trimmed
  • 1 piece of fresh ginger (about 2 inches), peeled
  • 1 bunch fresh thyme
  • 1 bunch fresh parsley
  • 4 cloves garlic
  • Juice of 2 limes
  • ⅓ cup olive oil
  • Optional: 1 tbsp Spice Jamaica Reggae Blend (or your favorite Caribbean spice mix)

Step-by-Step Instructions

Step 1: Prep Your Ingredients

  • Wash and chop all vegetables and herbs into manageable chunks.
  • Peel the garlic and ginger.
  • Squeeze the lime juice and set aside.

Step 2: Blend It All Together

  • Add all ingredients into a high-speed blender or food processor:
    • Chopped bell peppers
    • Onion
    • Scallions
    • Ginger
    • Garlic
    • Thyme
    • Parsley
    • Lime juice
    • Olive oil
  • Optional: Add Spice Jamaica Reggae Blend for an extra kick of flavor.
  • Blend until smooth but slightly textured. You want a thick, spoonable paste.

Step 3: Store and Use

  • Transfer to a glass jar or an airtight container.
  • Store in the fridge for up to 1 week, or freeze in ice cube trays for longer shelf life.
