The Sunday Pot Roast That Brings Everyone to the Table

Nothing says home-cooked comfort like a pot roast bubbling in the oven on a Sunday afternoon. This recipe by @theworkinghousemom takes the classic pot roast and gives it a rich, savory twist with Garlic Butter seasoning, Lipton Onion Soup Mix, and a perfectly balanced braising liquid that melts into every bite. If you’re looking for the perfect slow-roasted dinner that tastes like love in every forkful, this is it.

What makes this roast extra special is the carefully layered flavor—from the buttery skillet-seared beef to the herb-infused gravy and tender vegetables. It’s hearty, homey, and designed to bring everyone to the kitchen, hungry and happy. Whether you’re serving it for Sunday dinner or meal-prepping for the week, this is a must-make recipe for roast lovers.

Ingredients List

For the Braising Liquid

  • Beef broth
  • Worcestershire sauce
  • 1 packet of Lipton Onion Soup Mix

For the Chuck Roast

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Kinders Garlic Butter seasoning (to taste)
  • Olive oil
  • Butter
  • Chuck roast (about 3–4 pounds)

For the Vegetables & Aromatics

  • 1 yellow onion, sliced
  • 2 tablespoons of tomato paste
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • Carrots
  • Baby potatoes

Step-by-Step Instructions

1. Build the Braising Liquid

  • In a measuring cup, mix beef broth, Worcestershire sauce, and a packet of Lipton Onion Soup Mix.
  • Whisk together and set aside.

2. Season and Sear the Roast

  • Season your chuck roast with salt, pepper, garlic powder, onion powder, and Kinders Garlic Butter seasoning.
  • Drizzle with olive oil, rub it in well, then sear in a hot skillet with olive oil and butter until browned on all sides.

3. Sauté Aromatics and Build Flavor

  • Remove the roast and sauté sliced yellow onions in the same skillet.
  • Stir in tomato paste and cook until deep red.
  • Pour in the braising liquid and season again with Kinders Garlic Butter to taste.

4. Combine and Bake

  • Place the seared roast into a baking dish, pour the onion-braising mixture on top.
  • Tuck in rosemary and thyme sprigs.
  • Cover with foil and bake at 350°F for 2 hours.

5. Add Vegetables

  • After 2 hours, add carrots and baby potatoes to the dish.
  • Cover and return to the oven.

6. Finish Cooking

  • Bake for another 1½ hours at 350°F until the vegetables are fork-tender.
  • Roast is falling apart.

Pro Tips & Suggestions

  • Pat your roast dry before seasoning for the best sear.
  • For deeper flavor, marinate the roast with spices and oil overnight.
  • Add a splash of red wine to the braising liquid for extra richness.
  • Leftovers make great pot roast sandwiches or next-day stew.
