Southern Greens with a Soulful Twist

If you’ve been looking for that perfect side dish to level up your next Sunday dinner or holiday meal, this is it. Smothered Collards & Cabbage combines the earthy, deep flavor of collard greens with the tender bite of cabbage, all simmered down in smoky bacon fat, onions, and bold Cajun seasoning. It’s simple, soulful, and full of that good Southern energy we all crave.

This dish isn’t just a recipe—it’s a whole vibe. Rooted in Black Southern cooking traditions, this greens-and-cabbage combo takes the best of what grandma made and gives it a flavorful remix. Whether you serve it with cornbread, fried chicken, or a baked ham, this dish holds its own and then some.


Ingredients

For the Greens

  • 1 bunch fresh collard greens
  • 1 head crisp green cabbage

For the Flavor Base

  • 6–8 slices smoky bacon, cut into strips or cubes
  • 1 medium yellow onion, diced into ½-inch pieces
  • 1½ cups rich chicken broth
  • 1 tbsp white sugar
  • 1 tbsp bold Cajun seasoning
  • ½ tsp red pepper flakes (optional, for extra heat)

Step by Step Instructions

1. Prep the Vegetables

  • Dice onion, chop bacon, cut cabbage into 3-inch square pieces.
  • Slice collard greens into ribbons after removing their stems.

2. Cook Bacon and Onion

  • In a large pot over medium heat, cook bacon until browned (about 5 minutes).
  • Add diced onion and cook for another 5 minutes until softened.

3. Wilt the Collards

  • Remove bacon and onions from the pot, but keep the bacon fat.
  • Add collard greens and sauté in the fat for about 5 minutes to wilt.

4. Add Cabbage and Season

  • Add cabbage, bacon-onion mix, sugar, Cajun seasoning, and chicken broth to the pot.
  • Stirring until everything is well combined.

5. Simmer Until Tender

  • Bring the mixture to a boil.
  • Then reduce the heat, cover, and simmer for 20–30 minutes until the cabbage is fully tender.

  • Remove the collard stems for a more tender, less bitter bite.
  • Use smoked bacon for an extra layer of rich, deep flavor.
  • Add red pepper flakes if you like your greens with a spicy kick.
