Ingredients
- 3 sweet potatoes
- 1 tbsp avocado oil
- 2 cups water (plus more as needed)
- 1 bourbon vanilla bean, split and scraped (or 1 tbsp vanilla extract)
- ½ cup white cane sugar
- ½ cup brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- 2 tbsp honey
- Pinch of sea salt
Step-by-Step Instructions
1. Roast the Sweet Potatoes
- Preheat oven to 400°F.
- Stab holes in each sweet potato with a fork.
- Drizzle with avocado oil and wrap in aluminum foil.
- Place on a baking pan and roast for 45–60 minutes until tender.

2. Blend the Base
- Remove skins and place baked sweet potatoes in a blender.
- Add 2 cups of water and blend until smooth.

3. Make the Syrup
- In a saucepan, combine the sweet potato purée with vanilla bean, cane sugar, brown sugar, cinnamon, nutmeg, honey, and sea salt.
- Bring to a simmer over medium heat, stirring occasionally.
- Cook for 10–15 minutes until thickened into syrup consistency.

4. Strain and Store
- Strain through a fine mesh sieve for a smooth finish or to remove any pulp.
- Pour into a clean jar or bottle and refrigerate for up to 2 weeks.
5. Serve
- Use 2–3 tbsp in lattes, cocktails, or over pancakes and waffles.
- For a Sweet Potato Latte: pour syrup over ice, add coffee and creamer, top with whipped cream.
