Crispy, Smoky, and Straight Fire

What looks like fried chicken but isn’t? These crispy Enoki mushrooms, fried in a KFC-style crust and coated in a bold, smoky, spicy, and sweet Jamaican jerk sauce. Created by @plantcrazii, this dish flips the script on plant-based comfort food, delivering a crunchy bite that rivals your favorite fried chicken — no meat required.

Enoki mushrooms are known for their stringy, meaty texture, making them the perfect canvas for this island-style jerk sauce that’s packed with herbs, smoke, and heat. Add seasoned fried plantains on the side, and you’ve got a plate that screams flavor and culture all at once.


Ingredients List

For the Crispy Enoki Mushrooms

  • 1 pack fresh enoki mushrooms (found in most Asian markets)
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ cup plant-based milk (or water)
  • Oil, for frying

For the Jamaican Jerk Sauce

  • 2 tbsp Jamaican jerk seasoning (wet or dry blend)
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar or honey
  • ½ tsp allspice
  • ½ tsp smoked paprika
  • 1 clove garlic, minced
  • 1 tsp fresh thyme
  • ½ cup water
  • 1 tbsp oil (to bring it all together)

For the Plantains (Optional Side)

  • 2 ripe plantains, sliced
  • ½ tsp all-purpose seasoning
  • ½ tsp smoked paprika
  • Oil, for frying

Step-by-Step Instructions

1. Prep the Enoki

Trim the root base of the mushrooms and separate into clusters.

2. Coat & Fry

Dip mushrooms in the wet batter, dredge in flour mix, then fry in hot oil until golden brown and crisp. Drain on paper towels.

3. Build the Sauce

In a pan, sauté garlic and thyme, then stir in jerk seasoning, soy sauce, sugar, allspice, and smoked paprika. Add water and a splash of oil, simmer until thick.

4. Toss & Smother

Coat chicken in jerk sauce until fully smothered and glossy.

5. Serve Hot

Plate mushrooms with seasoned plantains and extra jerk sauce for dipping.
