These crispy chicken taquitos are everything you want in a handheld comfort food—boldly seasoned, packed with creamy cheese, and fried to golden perfection. Made with shredded rotisserie chicken and a blend of warm spices, cream cheese, and melty shredded cheese, each bite delivers serious flavor with minimal effort.

Lightly frying the corn tortillas before rolling keeps them soft and pliable, ensuring perfectly wrapped taquitos that don’t crack or fall apart. Whether you’re serving these for game day, family dinner, or a casual get-together, they’re guaranteed to disappear fast.


Ingredients

  • 1 tablespoon cumin
  • 1 teaspoon chicken bouillon
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon white pepper
  • 1 rotisserie chicken, shredded
  • 2 cups shredded melting cheese
  • 6 oz cream cheese, softened
  • Corn tortillas
  • Oil, for frying

Step-By-Step Instructions

1. Make the Filling

  • In a large bowl, add the shredded chicken, all seasonings, cream cheese, and shredded cheese.
  • Using clean hands, mix everything together until fully combined and creamy.

2. Prep the Tortillas

  • Heat a skillet over medium heat and add about ¼ inch of oil.
  • Lightly fry each corn tortilla just until soft and pliable.
  • Remove and set aside on a plate. This step prevents the tortillas from breaking while rolling.

3. Roll the Taquitos

  • Spoon a portion of the chicken mixture onto each tortilla.
  • Roll tightly and place seam-side down.

4. Fry Until Golden

  • Carefully place the rolled taquitos back into the hot oil seam-side down first.
  • Fry for about 2 minutes per side, or until crispy and golden brown.
  • Remove and drain on paper towels.

5. Serve & Enjoy
