Caribbean Soul in Every Bite

When it comes to hearty comfort food that speaks to Caribbean roots, jerk chuck roast is the kind of dish that immediately commands attention. The rich, slow-cooked beef infused with Jamaican jerk seasoning and bold spices makes this meal a showstopper. Traditionally, jerk flavor is associated with grilling, but this version brings all that smoky, peppery heat right into your slow cooker—no grill required.

This recipe isn’t just flavorful, it’s also convenient. Whether you’re meal prepping for the week or impressing guests on the weekend, this roast brings together soul food comfort with island flair. It’s a beautiful fusion that pays homage to the African-Caribbean diaspora—seasoned deeply, cooked low and slow, and served hot with love.


Ingredients (What You Need)

For the Chuck Roast:

  • 3–4 lbs chuck roast
  • 1 lime (for washing the meat)
  • ¼ cup white vinegar (for washing the meat)
  • 3 tbsp jerk seasoning
  • 3 tbsp black pepper
  • 1 tsp salt
  • 3 tbsp complete seasoning
  • 2 tbsp adobo seasoning
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Vegetables and Aromatics:

  • 3 scallions, chopped
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 3 medium potatoes, cubed
  • 3 carrots, sliced
  • 2 sprigs fresh thyme

For the Sauce:

  • ½ cup sweet red wine (Red Label Wine or Taylor Port recommended)
  • 1 cup water
  • 1 tbsp sugar
  • 2 tbsp ketchup
  • Additional seasoning (same as used on roast, excluding jerk seasoning)

Step-by-Step Instructions

1. Clean and Prepare the Meat

Rinse the chuck roast with lime juice and white vinegar. Let it soak for 5 minutes, then rinse with cool water and pat dry with paper towels.

2. Season the Roast

In a bowl, combine jerk seasoning, black pepper, salt, complete seasoning, adobo, paprika, garlic powder, and onion powder. Rub the spice mix all over the roast, cover, and refrigerate overnight for maximum flavor.

3. Chop the Vegetables

While the roast is marinating, prepare your vegetables. Dice the scallions, slice the onions, mince the garlic, cube the potatoes, and slice the carrots.

4. Sear the Roast

Heat a skillet on medium-high. Sear the chuck roast on all sides (about 3–4 minutes per side) to lock in flavor and develop a deep brown crust.

5. Sauté the Aromatics

Using the same pan, sauté the scallions, onions, and garlic until fragrant (2–3 minutes). Deglaze the pan with sweet red wine and let simmer for 1 minute. Add water and sugar, then stir to combine.

6. Assemble in the Slow Cooker

Place the seared roast in the crockpot. Pour the aromatic wine mixture over it, then surround the meat with potatoes and carrots. Top with thyme sprigs.

7. Add Final Seasoning Sauce

Halfway through cooking, mix ketchup with a splash of water and more of the roast seasoning (excluding jerk). Pour over the roast to enhance the flavor depth of the sauce.

8. Slow Cook to Perfection

Cover and cook on low for 8–10 hours or high for 5–6 hours until the meat is tender and falling apart.
