Homemade Strawberry Poptarts: Flaky, Fresh & From Scratch 🍓

Why buy strawberry poptarts at the store when you can make them at home—without all the extra ingredients you can’t even pronounce? These Homemade Strawberry Poptarts are flaky, buttery, filled with real strawberries, and topped with a sweet pink glaze that hits every nostalgic note. But the difference? You control everything that goes inside.

This recipe takes about 55 minutes and delivers bakery-style pastries with real fruit flavor and a golden, crisp crust. For our Black Foodie family who grew up on quick breakfast pastries before school, this is the grown-up, from-scratch upgrade. It’s giving homemade comfort, Black kitchen creativity, and that “I did that” energy all in one bite.


Ingredients

Pastry Dough:

  • 2½ cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 6–8 tbsp ice-cold water

Strawberry Filling:

  • 1½ cups chopped strawberries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp vanilla
  • Pinch of salt

Icing:

  • 1 cup powdered sugar
  • 1–2 tbsp heavy cream or milk
  • 1–2 tbsp strawberry filling
  • ½ tsp vanilla

Step-By-Step Instructions

1. Make the Dough

  • Combine flour, sugar, and salt.
  • Cut in the cold butter until crumbly.
  • Add ice-cold water and mix until the dough comes together before chilling for 30 minutes to 1 hour.

2. Prepare the Filling

  • Simmer chopped strawberries, sugar, and lemon juice on low for 5–8 minutes until thick and jam-like.
  • Stir in cornstarch and let cool completely.

3. Roll & Cut the Dough

  • Divide the chilled dough in half.
  • Roll it out thinly on a floured surface.
  • Cut into even rectangles using a pizza cutter.

4. Fill & Seal

  • Spoon 1–2 tablespoons of strawberry filling onto half of the rectangles.
  • Brush the edges with egg wash.
  • Top with remaining dough pieces and crimp with a fork to seal.

5. Bake the Poptarts

  • Place the poptarts on a parchment-lined baking sheet.
  • Bake at 375°F for 20–25 minutes until golden brown.
  • Allow them to cool completely.

6. Ice & Finish

  • Whisk together powdered sugar, heavy cream or milk, vanilla, and strawberry filling until smooth.
  • Spread over the cooled poptarts and let the icing set before serving.

  • Keep the butter cold for extra flaky layers.
  • Don’t overfill to prevent the poptarts from leaking while baking.
  • Cool completely before icing so the glaze sets perfectly.
  • Freeze extras and reheat in the toaster for a quick homemade breakfast.
