A Flaky, Cheesy Brunch Favorite You’ll Want to Save Forever

There’s something undeniably comforting about a bacon, egg, and cheese sandwich. It’s a go-to classic—easy to make, always satisfying, and endlessly customizable. But what if you could take that morning staple and transform it into a golden, flaky casserole that’s perfect for brunch, potlucks, or meal prepping for the week? Enter the Bacon, Egg & Cheese Croissant Bake—a warm, cheesy, buttery twist that’ll have everyone asking for seconds.

This croissant bake isn’t just delicious, it’s functional. It combines the savory goodness of crispy bacon, fluffy eggs, sharp cheddar cheese, and buttery croissants in one baked dish. Whether you’re feeding a family or entertaining for brunch, this recipe is rich in flavor and cultural comfort. Inspired by the classic breakfast flavors we all know and love, this bake makes you feel like you’re eating something special, without needing a culinary degree.


What You Need

  • 4 croissants (store-bought, day-old works best)
  • 1 pack of bacon
  • 4–5 eggs
  • ¾ cup milk
  • Cheddar cheese (a mix of sliced and shredded)
  • Salt (to taste)
  • Pepper (to taste)
  • 2 tbsp unsalted butter
  • 1½ tbsp honey

Step-by-Step Instructions

1. Cook the Bacon
Preheat your oven to 400°F. Place the bacon slices on a parchment-lined baking sheet and bake for about 10 minutes or until crispy. Remove from oven and set aside on paper towels to drain.

2. Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Set this mixture aside for later.

3. Cut and Arrange the Croissants
Slice each croissant into thirds and arrange them snugly in a casserole dish with the cut sides up. This helps the egg mixture soak in evenly and gives that beautiful, toasted croissant top.

4. Tuck in Bacon and Cheese
Take the cooked bacon slices and gently fold them, tucking them between croissant pieces. Cut a few thin slices of cheddar and do the same. Make sure each croissant has that cheesy, bacony love in between.

5. Pour the Egg Mixture
Evenly pour the egg mixture over the entire casserole. Use a brush to glaze some of the mixture over the tops of the croissants—this helps them brown beautifully and prevents them from drying out.

6. Fill the Gaps with Cheese
Shred the remaining cheddar cheese and sprinkle it over and around the croissants, especially in any gaps. This makes the bake extra cheesy and rich.

7. Bake It to Golden Perfection
Reduce the oven temperature to 375°F. Bake the croissant casserole uncovered for 20–25 minutes, or until the tops are golden and the eggs are fully set.

8. Make Honey Butter Glaze
While the bake finishes, melt the butter and stir in the honey. Once you remove the dish from the oven, brush the tops of the croissants with the honey butter for a glossy, sweet finish.
