Smoky, Creamy, and Straight Off the Grill

This isn’t your average corn on the cob—this is street corn energy with a Southern kitchen remix. Soaked in coconut milk, grilled to perfection, then brushed with a zesty ancho-lime butter? The combination of ranch seasoning, cilantro paste, creamy jalapeño sauce, lime pepper, and ancho chili powder creates that rich, tangy, smoky bite we love. Ingredients

For the Ancho Lime Butter:

  • 8 oz soft unsalted butter
  • 1 packet ranch seasoning
  • 1 tbsp cilantro paste
  • 1 tbsp creamy jalapeño sauce
  • 1 tsp lime pepper seasoning

For the Corn:

  • 6–8 ears fresh corn, husked and cleaned
  • 2 cups full-fat coconut milk (for soaking)

For the Finish:

  • Everything but the elote seasoning
  • Ancho chili powder
  • Fresh lime wedges

Step-By-Step Instructions

1. Make the Ancho Lime Butter

  • In a bowl, mix the softened butter with ranch seasoning, cilantro paste, creamy jalapeño sauce, and lime pepper until smooth and fully combined.

2. Prep & Soak the Corn

  • Remove any remaining silk from the corn.
  • Soak the ears in coconut milk for at least 30 minutes (covered and refrigerated if needed).

3. Grill the Corn

  • Preheat the grill to 400°F.
  • Cook the corn for about 5 minutes per side until lightly charred.

4. Move to Indirect Heat

  • Transfer the corn to the indirect heat zone to prevent flare-ups before brushing with butter.

5. Brush & Season

  • Generously brush the ancho lime butter over the hot corn.
  • Sprinkle with everything-but-the-elote seasoning and ancho chili powder.

6. Finish with Lime

  • Squeeze fresh lime over the top.
  • Serve immediately while hot and smoky.
