These smothered meatballs are the definition of Southern comfort—juicy, well-seasoned meatballs simmered in a rich onion-pepper gravy, then paired with velvety garlic mashed potatoes. Each bite delivers that home-cooked warmth you crave: savory, tender, and soul-satisfying. This is one of those dishes that feels like Sunday dinner any night of the week.


Ingredients

For the Meatballs:

  • 1 lb ground beef (85% lean, 15% fat)
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ onion, diced
  • ½ cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp thyme
  • 1 tsp all-purpose seasoning
  • ½ tsp cayenne pepper (optional for heat)
  • Salt, to taste

For the Gravy:

  • ½ onion, sliced
  • ½ green bell pepper, sliced
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 2 cups chicken stock
  • 1 tsp all-purpose seasoning
  • Salt, to taste

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • ½ cup heavy cream
  • 3 cloves garlic, minced
  • 4 tbsp butter
  • Salt, to taste

Step-by-Step Instructions

1. Make the Meatballs

  • In a large bowl, mix the ground beef, peppers, onion, breadcrumbs, egg, and seasonings until combined.
  • Roll into even-sized meatballs.

2. Brown the Meatballs

  • Heat oil in a skillet over medium heat.
  • Brown the meatballs on all sides, then remove and set aside.

3. Build the Gravy

  • In the same skillet, sauté onion, bell pepper, and garlic until fragrant.
  • Sprinkle in flour and stir to coat. Slowly whisk in chicken stock, then season.
  • Simmer until thickened.

4. Smother the Meatballs

  • Return the meatballs to the skillet and spoon gravy over the top.
  • Cover and simmer for 20 minutes, until meatballs are cooked through.

5. Make the Mashed Potatoes

  • Boil potatoes in salted water until tender.
  • Drain, then mash with cream, garlic, butter, and salt until smooth and creamy.

6. Serve and Enjoy

  • Plate the garlic mashed potatoes, top with smothered meatballs, and ladle on extra gravy.
