Where Coastal Flavor Meets Southern Soul

Imagine golden-seared red snapper kissed with lemony olive oil and nestled into a rich, creamy Creole sauce bursting with cherry tomatoes, garlic, and bold Brass Cuisine seasonings. Add a side of garlicky, buttery herb rice and you’ve got the kind of plate that doesn’t just feed—it satisfies deep.

This is Southern seafood at its finest: saucy, seasoned, and soulful. Whether it’s your first time cooking snapper or you’re a coastal cook through and through, this dish brings the spice, the comfort, and that signature down-home flavor.


Ingredients

For the Garlic & Herb Rice

  • 1½ cups rice
  • 1 tablespoon butter
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh parsley, chopped
  • Water, as needed (according to rice package instructions)

For the Red Snapper

  • 2–3 fillets red snapper (skin-on if possible)
  • 1 tablespoon lemon-flavored olive oil (plus more for pan)
  • 1 teaspoon Garlic Pepper Brass Cuisine Seasoning
  • 1 teaspoon Brass Cuisine Tuscan Seasoning
  • 1 teaspoon Salt-Free Creole Seasoning (Brass Cuisine)

For the Creamy Creole Sauce

  • 1 tablespoon lemon-flavored olive oil (for sautéing)
  • 1 cup cherry tomatoes, halved
  • ½ red bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ¾ cup heavy cream
  • 1 teaspoon Garlic Pepper Brass Cuisine Seasoning
  • 1 teaspoon Salt-Free Creole Seasoning (Brass Cuisine)

Step-by-Step Instructions

1. Make the Garlic & Herb Rice

  • In a pot, combine rice, water, butter, garlic, and parsley.
  • Bring to a boil, then cover and simmer until the rice is fluffy and tender.
  • Fluff with a fork and set aside.

2. Season & Cook the Red Snapper

  • Pat the snapper fillets dry.
  • Drizzle with lemon-flavored olive oil and season with Garlic Pepper, Tuscan, and Salt-Free Creole Seasoning.
  • In a large skillet over medium heat, cook the snapper skin-side down first for about 3–4 minutes per side until golden and flaky.
  • Remove from the pan and set aside.

3. Sauté the Vegetables

  • In the same skillet, drizzle a bit more lemon-flavored olive oil.
  • Add cherry tomatoes, bell peppers, and garlic. Sauté for 3–4 minutes until softened and fragrant.

4. Build the Creamy Creole Sauce

  • Stir in the tomato paste and cook for 1 minute.
  • Pour in the heavy cream and season with Garlic Pepper and Salt-Free Creole Seasoning.
  • Simmer for 3–5 minutes until slightly thickened and rich.

5. Finish the Dish

  • Gently place the snapper back into the skillet and spoon sauce over the fillets.
  • Let simmer for 1–2 minutes to reheat and coat with flavor.

6. Serve

  • Plate the fish over a scoop of garlic herb rice and spoon plenty of sauce on top.
  • Garnish with fresh parsley or lemon zest if desired.
