- 1/2 cup Tillamook Colby Jack shredded cheese
- 1/2 cup Tillamook Triple Cheddar shredded cheese
- 1/2 cup Tillamook Spicy Mexican shredded cheese
- 1 cup heavy whipping cream
- 1/2 package Boursin Garlic & Herb cheese
- 1 tsp Chicken Rub seasoning (Spice House recommended)
Step-by-Step Instructions
Step 1: Preheat Oven & Prep Potatoes
- Preheat oven to 400°F (200°C).
- Wash and thinly slice potatoes (use a mandoline for even slices).

Step 2: Make Cheese Sauce
- In a saucepan, melt butter over medium heat.
- Stir in flour and cook for 1 minute, whisking constantly.
- Add garlic and rosemary, then slowly pour in the heavy cream, whisking until thickened.
- Stir in Boursin cheese until melted.
- Mix in half of each shredded cheese (Colby Jack, Triple Cheddar, and Spicy Mexican).
- Season with chicken rub.

Step 3: Layer & Assemble
