Bright, Earthy, and Freshly Ground — A DIY Seasoning to Elevate Your Pantry

Skip the store-bought spice blends and make your own Homemade Green Bell Pepper Powder at home. This bright, herbaceous paprika-style seasoning adds a unique punch of flavor to soups, stews, rubs, and rice dishes. It’s made with just one ingredient and your dehydrator, making it a pantry essential for home cooks who love freshness and control.

Ingredients

  • Green bell peppers (use as many as you’d like)

Step-by-Step Instructions

Step 1: Prep the Bell Peppers

  1. Wash and dry your green bell peppers.
  2. Slice them open and remove the seeds and stems.
  3. Cut the peppers into thin slices for faster drying.

Step 2: Dehydrate

  1. Place the slices in a single layer on your dehydrator trays.
  2. Set the dehydrator to 122°F (50°C).
  3. Dry for several hours until the peppers are completely crisp and brittle—this can take anywhere from 6 to 10 hours depending on your machine and humidity.

Step 3: Grind into Powder

  1. Once fully dry, transfer the bell pepper pieces into a spice grinder or high-powered blender.
  2. Grind until it becomes a fine powder.
  3. Store in an airtight spice jar in a cool, dry place.

Pro Tips and Serving Suggestions

  • Add to rubs, marinades, or seasoning blends for meat and fish.
  • Stir into soups, stews, or rice dishes for color and depth.
  • For a smoky twist, roast the bell peppers before dehydrating.
  • Mix with smoked paprika or chili powder for a custom spice blend.
