1 lb fresh sea scallops (about 12)

Instructions
Step 1: Prepare the Scallops
Pat the scallops dry with a paper towel to remove excess moisture. This step is key to getting that perfect golden-brown sear.
Season one side of the scallops with Cajun seasoning, salt, and black pepper.
