Boldly Seasoned Salmon, Creamy Spinach Filling, and a Buttery Garlic Sauce—This Is Luxury on a Plate

Turn your dinner into a gourmet moment with this Creamy Stuffed Blackened Salmon. Each salmon fillet is loaded with a decadent mix of cream cheese, Parmesan, and sautéed spinach, then broiled to perfection and finished with a velvety garlic cream sauce. Packed with flavor and layered with spice, this dish is made to impress—without the restaurant price tag.


Ingredients

For the Salmon:

  • 4 salmon fillets
  • 3 tsp olive oil
  • 1 tbsp honey
  • 2 tsp Creole seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp lemon pepper
  • 1 tsp smoked paprika
  • 1 tsp dried thyme

For the Filling:

  • 8 oz cream cheese, room temperature
  • ½ cup Parmesan cheese, shredded
  • ½ cup spinach, sautéed and chopped
  • ¼ cup scallions, chopped
  • 1 tsp crushed red pepper
  • 1 tsp complete seasoning
  • ¼ tsp white pepper

For the Cream Sauce:

  • 2 tbsp butter
  • 1 sprig thyme
  • 2 tsp garlic paste
  • 2 cups heavy cream
  • ¼ cup Parmesan cheese
  • ¼ cup cheddar cheese
  • 1 tsp Italian seasoning
  • 1–2 tsp Creole seasoning, to taste

Step-by-Step Instructions

Step 1: Prep and Season the Salmon

  1. Cut a pocket into each salmon fillet (be careful not to slice all the way through).
  2. Rub with olive oil and honey.
  3. Season with Creole seasoning, garlic powder, onion powder, lemon pepper, smoked paprika, and thyme. Set aside.

Step 2: Make the Creamy Filling

  1. Sauté spinach until wilted and set aside to cool.
  2. In a bowl, combine cream cheese, Parmesan, sautéed spinach, scallions, crushed red pepper, complete seasoning, and white pepper. Mix until creamy.

Step 3: Stuff and Cook the Salmon

  1. Stuff each salmon fillet with a generous spoonful of the cream cheese filling.
  2. Place on a lined baking sheet and broil on high for 13–15 minutes, or until salmon is cooked through and golden.

Step 4: Make the Cream Sauce

  1. In a pan, melt butter over medium heat.
  2. Add garlic paste and thyme sprig, sauté until fragrant.
  3. Stir in heavy cream, then add Parmesan, cheddar, Italian seasoning, and Creole seasoning.
  4. Simmer gently until the sauce thickens and is smooth.

Step 5: Finish and Serve

  1. Remove salmon from oven and plate.
  2. Drizzle creamy sauce over each fillet.
  3. Serve hot with your favorite sides—like mashed potatoes, garlic green beans, or wild rice.
