This Hawaiian Ribeye Steak delivers that sweet-meets-savory steakhouse magic that made the original at Houston’s — now known as Hillstone Restaurant Group — such a fan favorite. The marinade is rich with pineapple juice, soy sauce, ginger, and garlic, creating layers of caramelized, umami-packed flavor that soak deep into the meat over 24 hours.

Once seared over high heat, the sugars in the marinade form a beautifully dark, glossy crust while the inside stays juicy and tender. It’s bold, flavorful, and built for anyone who loves that signature balance of tropical sweetness and steakhouse depth. This is the kind of dish that turns your kitchen into a five-star experience.


Ingredients

For the Hawaiian Marinade

  • 2 cups pineapple juice
  • ½ cup soy sauce
  • ½ cup granulated sugar
  • 5 tablespoons apple cider vinegar
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic

For the Steak

  • 2 (1-inch-thick) bone-in rib-eye steaks (about 3 pounds total)

Instructions

  • Stir well until the sugar fully dissolves.

2. Marinate the Steaks

  • Place the rib-eye steaks in a large resealable bag or shallow dish.
  • Pour the marinade over the steaks, ensuring they are fully coated.
  • Cover and refrigerate for at least 24 hours to allow the flavors to deeply penetrate the meat.

3. Prepare for Cooking

  • Remove the steaks from the marinade.
  • Pat them completely dry with paper towels (this ensures a proper sear).

4. Sear on High Heat

  • Heat a cast-iron skillet or grill to high heat.
  • Sear the steaks on both sides until they reach your desired level of doneness.
  • Allow the steaks to rest for a few minutes before slicing to keep the juices locked in.
