This Sizzling Southwest Cauliflower & Black Bean Skillet is packed with bold flavors, vibrant colors, and just the right amount of heat. The combination of tender cauliflower, smoky chili powder, earthy cumin, and fresh lime juice creates an irresistible dish that’s both hearty and refreshing.

Everything comes together in one pan, making this a quick, flavorful meal perfect for busy weeknights. Whether you serve it as a standalone dish, taco filling, or over rice, it’s guaranteed to hit the spot. And if you’re not detoxing, don’t forget to top it off with cheddar cheese and taco sauce for extra richness!


Ingredients

Shredded cheddar cheese (optional)

1 head cauliflower – chopped into small florets

1 cup black beans – drained and rinsed

1 onion – diced

1-2 bell peppers – sliced (use a mix of colors for variety)

1 jalapeño – sliced (optional for heat)

2 cloves garlic – minced

2 tablespoons avocado oil

1 teaspoon chili powder (or more to taste)

1 teaspoon cumin (or more to taste)

½ teaspoon black pepper

Salt – to taste

Juice of 1 lime

Avocado slices (optional, for topping)

Taco sauce (for serving, optional)


Step-by-Step Instructions

1. Sauté the Garlic & Onions

  1. Heat avocado oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  1. Stir in diced onions and cook until soft and translucent (about 2-3 minutes).

2. Cook the Cauliflower & Peppers

  1. Add the chopped cauliflower and sliced bell peppers to the skillet.
  1. Season generously with chili powder, cumin, black pepper, and salt.
  2. Stir well, making sure everything is coated in those smoky, bold flavors.

3. Add Black Beans & Lime Juice

  1. Pour in the black beans and squeeze in fresh lime juice.
