A Salad That Actually Slaps

Say goodbye to boring greens—this Shrimp Kale Salad is that girl. Packed with textures, layers of flavor, and bright, nourishing ingredients, this bowl is a whole experience. From the massaged kale to the crispy onion straws, juicy shrimp, and tangy vinaigrette, every bite is bold, fresh, and completely satisfying.

Whether you’re meal-prepping for the week or building the perfect lunch bowl, this salad is quick, versatile, and nutrient-rich. What You Need

For the Base

  • 1 bunch kale, de-stemmed and chopped
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder

For the Toppings

  • ¼ cup grated Parmesan cheese
  • ⅓ cup shredded carrots
  • ½ cup cherry tomatoes, halved
  • 1 hard-boiled egg, sliced or chopped
  • ¼ cup crispy onion straws
  • ¼ cup crushed croutons

For the Protein & Dressing

  • 6–8 sautéed or grilled shrimp (or your preferred protein)
  • 2 tbsp champagne vinaigrette (or your favorite dressing)

Step by Step Instructions

1. Massage the Kale

Toss chopped kale with olive oil, salt, pepper, onion powder, and garlic powder, and massage with your hands for 2–3 minutes until soft and tender.

2. Add the Good Stuff

Mix in Parmesan cheese, shredded carrots, cherry tomatoes, sliced egg, crispy onion straws, and crushed croutons.

3. Add Your Protein

Top the salad with sautéed or grilled shrimp—or swap in any protein you love.

4. Dress and Serve

Drizzle with champagne vinaigrette or your go-to dressing, toss lightly, and serve immediately.
