Golden, Creamy, and Baked to Perfection

These scalloped potatoes are the ultimate comfort food side dish. With thinly sliced russets layered in a garlicky cream sauce, rich Tillamook cheeses, and a savory blend of herbs, this recipe bakes into cheesy, bubbling bliss. Boursin garlic herb cheese brings a bold punch of flavor, while a final broil delivers that irresistible golden top.

Perfect for Sunday dinners, potlucks, or holiday spreads, this dish turns humble potatoes into something spectacular.


Ingredients

  • 2-3 russet potatoes, thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp chopped rosemary
  • 2 cloves garlic, minced
  • 1/2 cup Tillamook Colby Jack shredded cheese
  • 1/2 cup Tillamook Triple Cheddar shredded cheese
  • 1/2 cup Tillamook Spicy Mexican shredded cheese
  • 1 cup heavy whipping cream
  • 1/2 package Boursin Garlic & Herb cheese
  • 1 tsp Chicken Rub seasoning (Spice House recommended)

Step-by-Step Instructions

Step 1: Preheat Oven & Prep Potatoes

  • Preheat oven to 400°F (200°C).
  • Wash and thinly slice potatoes (use a mandoline for even slices).

Step 2: Make Cheese Sauce

  • In a saucepan, melt butter over medium heat.
  • Stir in flour and cook for 1 minute, whisking constantly.
  • Add garlic and rosemary, then slowly pour in the heavy cream, whisking until thickened.
  • Stir in Boursin cheese until melted.
  • Mix in half of each shredded cheese (Colby Jack, Triple Cheddar, and Spicy Mexican).
  • Season with chicken rub.

Step 3: Layer & Assemble

  • In a greased baking dish, add a layer of sliced potatoes.
  • Spoon over some cheese sauce.
  • Repeat layers until all ingredients are used.
  • Sprinkle remaining shredded cheeses on top.

Step 4: Bake & Broil

  • Cover with foil and bake for 45 minutes.
  • Remove foil and broil for 5 minutes, or until golden and bubbly.
