A Decadent Twist on Classic Cheesecake

This Biscoff Mexican Cheesecake is rich, creamy, and infused with bold Mexican vanilla for an unforgettable dessert. The velvety cheesecake base is lightly sweetened with condensed milk and enhanced with a swirl of cookie butter, all resting inside a buttery crust. But the real showstopper? A warm cookie butter topping poured over the cheesecake straight from the oven, then finished with a crunchy sprinkle of crushed Biscoff cookies.

It’s a dessert that balances smooth, creamy indulgence with spiced, cookie-crunch magic — perfect for celebrations or whenever you’re craving something extra special.


Ingredients

For the Cheesecake

  • 1 block cream cheese, softened
  • 1 egg, room temperature
  • 1 tbsp Mexican vanilla flavor
  • ½ can condensed milk
  • 1 tbsp cookie butter

For the Topping

  • ½ cup cookie butter, melted
  • 7–8 Biscoff cookies, crushed

For the Crust

  • 1 premade pie crust or homemade crust of choice

Step-by-Step Instructions

1. Make the Cheesecake Batter

  • In a mixing bowl, beat softened cream cheese until smooth.
  • Add egg and Mexican vanilla; mix until well incorporated.
  • Pour in condensed milk and mix again.
  • Stir in 1 tbsp cookie butter until combined.

2. Prepare the Crust

  • Place premade crust (or homemade crust) into a pie dish.
  • Pour the cheesecake batter evenly into the crust.

3. Bake the Cheesecake

  • Preheat oven to 350°F (175°C).
  • Bake for 40–45 minutes, or until the center is set but still slightly jiggly.

4. Add the Topping

  • While cheesecake is finishing, melt ½ cup cookie butter.
  • Crush 7–8 Biscoff cookies into coarse crumbs.
  • As soon as cheesecake comes out of the oven, pour melted cookie butter over the top.
  • Sprinkle with crushed Biscoff cookies.

5. Cool and Serve

  • Let cheesecake cool to room temperature, then refrigerate at least 2 hours before serving.
  • Slice and enjoy chilled.”
