Ingredients
For the Cheesecake
- 1 block cream cheese, softened
- 1 egg, room temperature
- 1 tbsp Mexican vanilla flavor
- ½ can condensed milk
- 1 tbsp cookie butter
For the Topping
- ½ cup cookie butter, melted
- 7–8 Biscoff cookies, crushed
For the Crust
- 1 premade pie crust or homemade crust of choice
Step-by-Step Instructions
1. Make the Cheesecake Batter
- In a mixing bowl, beat softened cream cheese until smooth.
- Add egg and Mexican vanilla; mix until well incorporated.
- Pour in condensed milk and mix again.
- Stir in 1 tbsp cookie butter until combined.

2. Prepare the Crust
- Place premade crust (or homemade crust) into a pie dish.
- Pour the cheesecake batter evenly into the crust.

3. Bake the Cheesecake
- Preheat oven to 350°F (175°C).
- Bake for 40–45 minutes, or until the center is set but still slightly jiggly.
4. Add the Topping
- While cheesecake is finishing, melt ½ cup cookie butter.
- Crush 7–8 Biscoff cookies into coarse crumbs.
- As soon as cheesecake comes out of the oven, pour melted cookie butter over the top.
- Sprinkle with crushed Biscoff cookies.

5. Cool and Serve
- Let cheesecake cool to room temperature, then refrigerate at least 2 hours before serving.
