Ingredients
For the Chicken & Noodles
- 2–3 boneless chicken breasts, cleaned and rinsed
- Water (enough to cover chicken)
- 1 tbsp chicken bouillon (or bouillon cubes)
- 1 tsp seasoned salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- 1 pack spaghetti noodles
For the Sauce
- 1 can Rotel (original or mild)
- ½ block Velveeta cheese (cubed)
- 1 can cream of chicken soup (or cream of mushroom, optional)
Step-by-Step Instructions
1. Boil the Chicken
- In a large pot, boil chicken with water, bouillon, seasoned salt, garlic powder, onion powder, and pepper until fully cooked.

2. Remove & Shred
- Take the chicken out and shred it with two forks.
- Leave the seasoned water in the pot.

3. Cook the Spaghetti
- Add spaghetti noodles to that same seasoned water and boil until done.
- Drain and set aside in a large pan or baking dish.

4. Make the Cheese Sauce
- In a saucepan, melt Velveeta cheese with the Rotel and cream of chicken soup until smooth and creamy.

5. Combine Everything
- Pour the cheese sauce over the cooked spaghetti.
- Add shredded chicken, and mix well until evenly combined.

6. Bake (Optional)
- Pop the dish into a 350°F oven for 10–15 minutes if you want it extra bubbly and baked.

7. Serve
- Plate it hot with a side salad and garlic bread for the perfect weeknight meal.
