A Pork-Free Classic with a Southern Twist

If you’re skipping pork but still want that classic soul food flavor, these Smothered Turkey Chops are your new go-to. This recipe by @prestigecookingllc delivers crispy, seasoned turkey chops drowned in a rich, savory onion gravy that feels right at home on any holiday table — or any day you need comfort on a plate.

With a bold seasoning mix, a golden fry, and a deep, homemade pan gravy, these chops are crispy on the outside, juicy inside, and smothered to perfection. You can eat them solo, throw them in a sandwich, or serve over creamy mashed potatoes. Either way, this dish is pressure.


Ingredients List

For the Seasoned Turkey Chops

  • 4–6 turkey chops, cleaned and patted dry
  • 2 tbsp yellow mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp Mrs. Dash (or salt-free all-purpose blend)
  • 1 tsp all-purpose seasoning of choice
  • 2 large eggs, beaten

For the Dredge

  • 1 ½ cups all-purpose flour
  • Use the same seasonings as above to season the flour

For Frying

  • Vegetable oil, for pan-frying

For the Onion Gravy

  • ½ cup chopped yellow onions
  • 1 tbsp minced garlic
  • ½ cup all-purpose flour
  • 2 cups chicken broth
  • Salt & pepper, to taste

Step-by-Step Instructions

1. Season the Turkey

  • Coat turkey chops with mustard.
  • Season with garlic powder, onion powder, smoked paprika, Mrs. Dash, and all-purpose seasoning.

2. Add the Eggs

  • Mix in two beaten eggs and toss until everything is evenly coated.

3. Prepare the Dredge

  • In a bag or bowl, combine flour with the same seasonings.
  • Coat each chop thoroughly and set on a wire rack to rest.

4. Fry the Chops

  • Heat vegetable oil in a cast-iron or deep skillet.
  • Fry each chop for 7–10 minutes until golden.
  • Drain on paper towels.

5. Build the Gravy

  • Slowly whisk in chicken broth, season to taste.
  • Simmer until thick.

6. Smother the Chops

  • Return turkey chops to the pan, and coat with gravy.
  • Let simmer for a few minutes before serving.
