These Cajun-Style Pinto Beans Are Set-It-and-Forget-It Comfort

Looking for a hearty, flavorful, no-fuss meal that cooks while you handle your day? These Cajun-style pinto beans are your answer. Packed with bold spices, smoky meat, and slow-cooked until buttery tender, this recipe is a Southern classic — made easy in the slow cooker.

Whether you’re using smoked turkey necks, pork bones, or turkey tails, the flavor gets deep and rich with every hour it simmers. Just toss everything in the pot and walk away. Pair it with rice and cornbread for a full meal that’s straight-up soul-satisfying.


Ingredients

For the Beans:

  • 1 lb pinto beans
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped

Dry Seasoning:

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tsp oregano
  • 1 tsp red pepper flakes (optional)
  • 1½ tsp chicken bouillon (optional)
  • ½ tsp dried thyme or 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste

For Cooking:

  • 2½ cups chicken stock or broth
  • 1 pack Royal Cajun-Style Smoked Neckbones, Turkey Tails, or Turkey Necks

Step-by-Step Instructions

1. Soak and Rinse

  • Pick through the pinto beans to remove any debris or bad beans.
  • Soak overnight, or use a quick soak method.
  • Drain and rinse before cooking.

2. Load the Slow Cooker

  • Add soaked beans, bell peppers, onion, garlic, all dry seasonings, bay leaves, and chicken bouillon (if using) to the slow cooker.

3. Add Liquid and Meat

  • Pour in chicken broth and stir.
  • Nestle smoked neckbones or turkey parts on top.

4. Cook Low and Slow

  • Cover and cook on LOW for 8 hours or HIGH for 6 hours, until beans are tender and meat is falling off the bone.

  • Soaking = softer beans – Overnight soak gives a creamier texture.
  • Use smoked turkey or pork – Adds rich flavor with less effort.
