Forget everything you thought you knew about frying chicken—boiling before frying is the flavor and texture upgrade you didn’t know you needed. This method, shared by Erica Marie (@im_ericamarie), locks in moisture so each bite is juicy and tender, while the final fry delivers that golden, irresistible crunch.

These wings are seasoned with a bold, aromatic mix—think smoky paprika, lemony brightness, and a little cayenne heat—making them perfect for game day, family dinners, or anytime you want a plate of wings that will have everyone asking for seconds.


Ingredients

Chicken

  • 10 chicken wings

Seasoning Blend (1 teaspoon each):

  • Lemon pepper
  • Cayenne pepper
  • Smoked paprika
  • Onion powder
  • Roasted garlic powder
  • Onion butter seasoning (such as @kindersflavors)
  • 1 packet salt-free Sazon

Step-by-Step Instructions

1. Boil the Chicken

  • In a large pot, add chicken wings and cover with water.
  • Season lightly with salt or a pinch of your seasoning blend.
  • Bring to a boil, then reduce to a simmer and cook until chicken is just cooked through (about 10–12 minutes).
  • Remove from water and pat wings completely dry with paper towels.

2. Make the Wet Coating

  • In a medium bowl, combine mustard with the entire seasoning blend.
  • Toss the boiled wings in the mustard mixture until fully coated.

3. Dredge in Seasoned Flour

  • In a large freezer bag, combine flour with another round of the seasoning blend (about half the original amount).
  • Add the mustard-coated wings to the bag, seal, and shake until each piece is fully coated.

3. Fry Until Golden

  • Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  • Fry the wings in batches until the skin is crispy and golden brown, about 5–7 minutes.
  • Transfer to a wire rack or paper towels to drain excess oil.

4. Serve & Enjoy

  • Serve hot with your favorite dipping sauces or a squeeze of fresh lemon for extra zing.
