There’s nothing quite like the satisfaction of recreating your favorite restaurant dish at home—especially when you can make it fresher, more flavorful, and significantly more budget-friendly. This homemade burrito bowl does exactly that, delivering all the components you love about that popular chain but with more generous portions and authentic taste.

What makes this recipe truly special is its meal prep potential. While a single restaurant bowl might cost you $15 (and that’s before adding guac), you can create eight complete bowls at home for around $35 in groceries. That’s smart eating that doesn’t compromise on flavor or satisfaction.

The secret lies in building each component with intention—perfectly seasoned black beans, aromatic cilantro-lime rice, fresh corn salsa, and creamy guacamole that actually tastes like avocados instead of preservatives. When you control the ingredients, you control the quality, and the difference is remarkable.

Everything You’ll Need

For the Fresh Guacamole

  • 3 large ripe avocados
  • ¼ cup red onion, finely diced
  • 3 tbsp fresh jalapeños, chopped
  • Juice of 1 lime
  • ⅓ cup fresh cilantro, chopped
  • 2 tsp salt (adjust to taste)

For the Cilantro-Lime Rice

  • 6 cups cooked long-grain white rice

For the Seasoned Black Beans

  • 3 cans (15.5 oz each) black beans, drained and rinsed
  • 2 tsp onion powder
  • 2 tsp salt (to taste)
  • 1 tbsp fresh lime juice

For the Corn Salsa

  • 3 bags (12 oz each) frozen sweet corn, thawed
  • 3 jalapeños, seeded and finely diced
  • 1 cup red onion, diced
  • 1 cup fresh cilantro, chopped
  • 1 tbsp salt (to taste)
  • Juice of 1 lime

Optional Bowl Additions

  • 1½ lbs Monterey Jack cheese, freshly shredded
  • High-quality sour cream
  • 1½ heads romaine lettuce, chopped
  • Fresh pico de gallo
  • Grilled chicken (seasoned chipotle-style)

Cooking Instructions

Prepare the Black Beans

Heat the black beans in a medium saucepan over gentle heat. Stir in the onion powder, salt, and lime juice. Let them simmer briefly to absorb the seasonings, then keep warm until serving.

Create the Corn Salsa

In a large mixing bowl, combine the thawed corn with diced jalapeños, red onion, and fresh cilantro. Add salt and lime juice, then toss everything together. This can be made ahead and chilled—the flavors actually improve over time.

Make the Guacamole

Mash the avocados in a bowl to your preferred texture—some people like it smooth, others prefer it chunky. Fold in the red onion, jalapeños, cilantro, lime juice, and salt. Taste and adjust seasonings as needed. This guac is vibrant, fresh, and loaded with real flavor.

Finish the Rice

Take your warm, cooked rice and gently fold in the lime juice, salt, and chopped cilantro. The rice should be fragrant and bright—if you want extra depth, consider cooking the rice with a bay leaf or two.
