Sweet, Savory, and Sizzling with Flavor

This homemade Pepper Steak is a saucy, sizzling stir-fry classic. It features tender cuts of beef marinated in a garlicky, umami-rich blend and tossed with sweet onions and vibrant bell peppers. Balanced with brown sugar, soy sauce, and a punch of oyster sauce, this dish delivers bold takeout flavor with a homemade twist.

Perfect over jasmine rice, it’s an easy weeknight recipe that feels gourmet with every bite.


Ingredients

For the Steak & Marinade

  • Your favorite steak, cubed or finely sliced
  • 2 tsp minced garlic
  • 2 tsp Shaoxing wine (or dry sherry/white wine)
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 4 tbsp brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp baking soda
  • 1 tsp oil

Vegetables

  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 sweet onion, chopped

For the Sauce

  • 3/4 cup cold water
  • 2 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tsp sesame oil
  • 4 tbsp brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Cornstarch slurry (1 tsp cornstarch + 1 tsp cold water)

For Serving

  • Cooked jasmine rice

Step-by-Step Instructions

Step 1: Marinate the Steak

  1. Slice or cube your steak.
  2. In a bowl, mix all marinade ingredients and toss with the steak.
  3. Let marinate for at least 15 minutes.

Step 2: Chop the Veggies

  1. Dice green and red bell peppers and onions into small/medium pieces.
  2. Set aside for sautéing.

Step 3: Sauté the Vegetables

  1. Heat oil in a large skillet or wok.
  2. Add bell peppers and cook halfway through.
  3. Add onions and sauté until soft and fragrant.
  4. Remove vegetables from the pan and set aside.

Step 4: Sear the Steak

  1. Add oil to the same skillet or a cast-iron pan.
  2. Add the marinated steak and let it sit undisturbed for a good crust.
  3. Flip and cook through until browned and tender.

Step 5: Combine & Sauce

  1. Add sautéed vegetables back to the skillet with the steak.
  2. Mix sauce ingredients in a small bowl.
  3. Pour sauce over the steak and bring to a boil.
  4. Stir in the cornstarch slurry to thicken.
  5. Simmer and stir until the sauce coats everything evenly.

Step 6: Serve

  1. Turn off heat and serve hot over steamed jasmine rice.
  2. Garnish with optional green onions or sesame seeds.
