Baked Chicken Wings Coated in Fresh Chimichurri with a Cool Creamy Ranch Dip

These Chimichurri Wings by Chef Keysh bring big herbaceous flavor with a bold, tangy punch. The fresh parsley, garlic, olive oil, and red wine vinegar chimichurri seeps into every bite of the chicken, then it’s all balanced out with a cool ranch-style cream dip made with heavy cream, mayo, and ranch seasoning. It’s bold meets creamy, and it absolutely slaps.

Whether you’re meal-prepping, hosting a game day party, or just in the mood to throw down in the kitchen, these wings bring the perfect combo of bright, zesty, and savory.


Ingredients

For the Chimichurri:

  • 1 red bell pepper, finely chopped
  • 1 bunch curly parsley, finely chopped
  • 4–6 garlic cloves, minced
  • ½ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and black pepper, to taste

For the Wings:

  • 2–3 lbs chicken wings, flats, and drums
  • Salt and black pepper, to taste
  • Chimichurri mixture (above)

For the Ranch Dipping Sauce:

  • ½ cup heavy cream
  • ½ cup mayonnaise
  • 1 tablespoon ranch seasoning mix

Step-by-Step Instructions

Step 1: Make the Chimichurri

  • In a bowl, combine:
    • Chopped red bell pepper
    • Finely diced curly parsley
    • Minced garlic
    • Extra virgin olive oil
    • Red wine vinegar
    • Salt and pepper, to taste
  • Mix well and set aside. The longer it sits, the better the flavor.

Step 2: Season and Bake the Wings

  • Preheat oven to 400°F.
  • Pat chicken wings dry and season with salt and pepper.
  • Toss wings in half of the chimichurri mixture until coated.
  • Arrange on a baking rack or foil-lined sheet.
  • Bake for 35–45 minutes, flipping halfway, until skin is crispy and golden.

Step 3: Make the Creamy Ranch Dip

  • In a small bowl, whisk together:
    • Heavy cream
    • Mayonnaise
    • Ranch seasoning
  • Chill in the fridge until ready to serve.

Step 4: Finish and Serve

  • Remove wings from oven and toss or drizzle with remaining chimichurri.
  • Plate with ranch dipping sauce on the side.
  • Optional: Garnish with extra parsley and a sprinkle of chili flakes.

  • Use a wire rack on your baking tray for crispy wings on all sides.
  • Want even more flavor? Marinate the wings in chimichurri overnight before baking.
