Who said plant-based eating can’t be indulgent? These Crispy Vegan Wings (Vings) are here to prove otherwise! Packed with flavor, texture, and a satisfying bite, these jackfruit-based wings are crispy on the outside, juicy on the inside, and glazed with a sweet and spicy teriyaki sauce for the ultimate game-day snack or weeknight meal.

Made with jackfruit, chickpeas, and vital wheat gluten, these “vings” bring a meaty texture that mimics traditional wings without the meat. The secret? A crispy rice paper coating that gives every bite that deep-fried crunch we all love. Whether you air-fry or pan-fry them, you’re in for a treat.

Ingredients

  • 2 cups jackfruit – drained and shredded
  • 2 cups chickpeas – mashed
  • ½ cup vital wheat gluten
  • 2 tablespoons maple syrup
  • Rice paper rolls – for the crispy skin
  • 1 tablespoon lemon juice
  • Sweet & spicy teriyaki sauce – as much as you like!

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar

Step-by-Step Cooking Instructions

1. Prep the “Meat” Mixture

  1. Drain and shred the jackfruit into small, stringy pieces.
  2. In a bowl, mash the chickpeas until slightly chunky.
  3. Combine the jackfruit and chickpeas with vital wheat gluten, maple syrup, lemon juice, and all the seasonings.
  1. Mix everything until you get a firm, moldable dough. If it’s too dry, add a splash of water.

2. Shape the Wings

  1. Take small portions of the mixture and shape them into wing-like pieces.
  1. If making drumsticks, insert a chopstick into each piece before moving to the next step.

3. Wrap with Rice Paper for Crispy Texture

  1. Dip a rice paper roll in warm water for 5 seconds until slightly soft.
  2. Wrap each wing tightly in the rice paper, creating a thin, crispy layer around them.

4. Cook the Wings

  1. Pan-fry or air-fry at 375°F (190°C) for 15–20 minutes, flipping halfway, until golden brown and crispy.

5. Glaze & Serve

  1. Toss the crispy wings in your sweet & spicy teriyaki sauce until evenly coated.
  1. Serve hot and enjoy the delicious plant-based goodness!

For extra crispiness, double-wrap the wings in rice paper.
