These cookies give lemon sunshine and blueberry bliss in every single bite. Naturally sweetened and packed with plant-based protein, these Vegan Lemon Blueberry Thumbprint Cookies are proof that dessert doesn’t have to come with a side of guilt. They’re buttery without the butter, sweet without the sugar, and beautifully tart, thanks to a squeeze of lemon.

Inspired by wholesome, nourishing ingredients and Black plant-based tradition, this recipe is perfect for your lunchbox, after-yoga snack, or fun baking moment with the kiddos. And the best part? That bright pop of blueberry chia jam nestled right in the center—pure deliciousness.


Ingredients

  • Blueberry chia seed jam (see tutorial on TriDereka’s YouTube channel)
  • 1 cup walnut butter
  • ½ cup agave syrup
  • ½ cup unflavored protein powder (we recommend @complement)
  • ¼ cup almond flour
  • 1 tsp vanilla extract
  • 2–3 tbsp lemon juice (to be mixed into batter or chia jam)

Step-by-Step Instructions

1. Make the Dough

  1. In a medium bowl, combine the walnut butter, agave, protein powder, almond flour, vanilla extract, and lemon juice.
  2. Stir well until a thick, scoopable dough forms.

2. Chill to Set

  1. Cover the bowl and place it in the fridge for 15 minutes to let the dough firm up.
  2. This makes it easier to roll and shape.

3. Shape the Cookies

  1. Roll the dough into small balls and place them on a parchment-lined baking sheet.
  2. Use your thumb or a small spoon to press gently into the center of each ball, creating space for the jam.

4. Fill with Jam

  1. Bake the cookies at 350°F (175°C) for 10–12 minutes.
  2. Fill the center of each cookie with a spoonful of blueberry chia seed jam.

5. Bake & Serve

  1. Let them cool completely before eating.
  2. Enjoy immediately or store in an airtight container for up to a week.
