This Southern Baked Mac & Cheese Is the Ultimate Crowd-Pleaser

This amplified version of Southern Baked Mac & Cheese is everything you love about the classic—creamy, cheesy, and baked to golden perfection. It’s rich, flavorful, and brings that soul-warming comfort with every bite. Whether you’re serving it at a holiday dinner, Sunday supper, or casual potluck, this recipe is sure to steal the show.

Baked mac and cheese has long been a cornerstone of Southern kitchens. But this version takes it up a notch by layering different types of cheeses and adding depth with smoky provolone and a well-seasoned milk blend. The crispy, golden crust on top? That’s the magic. It’s the kind of dish that gets folks lingering by the oven, waiting for that first spoonful.


Ingredients

Cheese Mixture

  • (2) 32 oz sharp cheddar cheese (save about 2–4 cups for topping)
  • 16–24 oz mozzarella cheese
  • 12 oz smoked-flavor provolone cheese

Milk Mixture

  • 2–4 eggs
  • 4 ½ cups heavy whipping cream
  • 4 cups whole milk
  • 2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder

Macaroni

  • Salt to taste
  • 2 lbs elbow macaroni
  • 32 oz less-sodium chicken broth
  • Water (enough to boil pasta)
  • 1 stick salted butter
  • 1 ¼–1 ½ cups sour cream
  • Reserved cheese mixture
  • Reserved milk mixture
  • 2 tsp black pepper
  • 2 tsp paprika
  • 2 ½ tsp onion powder
  • 1 tsp garlic powder

Step-by-Step Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375–400°F.
  2. This ensures it’s hot and ready for that perfectly golden baked top.

Step 2: Boil the Macaroni

  1. In a large pot, bring water and chicken broth to a boil (add salt if desired).
  2. Add elbow macaroni and cook until al dente.
  3. Drain (do not rinse) and return the hot pasta to the pot immediately.

Step 3: Make the Milk Mixture

  1. In a large bowl, whisk together:
    • 2–4 eggs
    • 4½ cups heavy whipping cream
    • 4 cups whole milk
    • 2 tsp black pepper
    • 1 tsp paprika
    • 1 tsp salt
    • 1 tsp onion powder
    • 1 tsp garlic powder
  2. Set the milk mixture aside.

Step 4: Add Butter & Sour Cream

  1. While the pasta is still warm, add 1 stick of salted butter and stir until melted.
  2. Stir in 1¼ to 1½ cups of sour cream until well combined and smooth.

Step 5: Mix in Cheese & Milk Mixture

  1. Add about ⅓ to ⅔ of the cheese mixture to the pasta.
  2. Pour in ⅓ to ⅔ of the milk mixture.
  3. Season to taste with additional black pepper, paprika, onion powder, garlic powder, and salt.
  4. Stir well until the cheese begins to melt and the mixture is creamy.

Step 6: Layer the Mac & Cheese

  1. Spray a baking dish or tray with non-stick spray.
  2. Add a layer of macaroni.
  3. Pour a portion of the reserved milk mixture over it.
  4. Add a layer of the reserved cheese mixture.
  5. Repeat the layers until all ingredients are used.

Step 7: Add Final Toppings

  1. Top with the remaining sharp cheddar cheese.
  2. Sprinkle paprika over the top for color and flavor.

Step 8: Bake Covered

  1. Cover the dish with foil (avoid letting the foil touch the cheese).
  2. Bake for 30–40 minutes until bubbly and heated through.

Step 9: Broil for Crispiness

  1. Remove the foil and switch oven to Broil.
  2. Let the top get golden and crispy—watch carefully to avoid burning.

Step 10: Let It Rest & Serve

  • Serve and enjoy every creamy, cheesy bite!
  • Let the mac & cheese sit for 5–10 minutes to set.
