Nothing says comfort food like a warm, buttery biscuit—especially when it’s swimming in a rich pool of brown sugar and bursting with juicy blueberries. These Brown Sugar Blueberry Swim Biscuits combine the best of two worlds: the crisp edges of a biscuit and the moist, tender texture of a cake. This recipe is inspired by classic Southern biscuits but takes a sweet, indulgent turn with a deep caramel-like flavor from the brown sugar.

Perfect for breakfast, brunch, or even dessert, these biscuits are a one-bowl wonder that require minimal effort. Whether you’re serving them fresh out of the oven or drizzled with a sweet glaze, this is a recipe that will have everyone reaching for seconds.


Ingredients: What You’ll Need

For the Swim Biscuits:

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ¼ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup milk (whole or buttermilk)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • ½ teaspoon cinnamon (optional)

For the Brown Sugar Butter Sauce:

  • ½ cup unsalted butter, melted
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla extract

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract

Step-by-Step Instructions

1. Preheat & Prepare

Preheat your oven to 375°F (190°C). Grease or butter a 9×9-inch baking dish to prevent sticking.

2. Melt the Butter & Create the Brown Sugar Pool

In a microwave-safe bowl, melt ½ cup unsalted butter. Stir in ½ cup brown sugar and 1 teaspoon vanilla extract. Pour this mixture directly into the bottom of the greased baking dish. This will create the “swim” effect as the biscuits bake.

3. Mix the Dry Ingredients

In a large mixing bowl, whisk together:

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon (if using)

4. Combine the Wet Ingredients

Pour in:

  • 1 cup milk
  • ½ cup melted butter
  • 1 teaspoon vanilla extract

Gently mix until just combined. The batter should be thick and slightly lumpy.

5. Fold in the Blueberries

Gently fold 1 cup of blueberries into the batter, being careful not to overmix. This ensures the blueberries remain intact and don’t turn the dough purple.

6. Assemble the Biscuits

Pour the biscuit batter over the melted brown sugar butter mixture in the baking dish. Use a spatula to evenly spread it out.

7. Bake to Perfection

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

8. Make the Glaze (Optional)

While the biscuits are baking, whisk together:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
