A Simple, Savory Garlic Herb Chicken That Feels Like Home

This Garlic Herb Chicken by Leann Williams is the kind of meal that makes your kitchen smell like love. Slathered in a buttery herb blend featuring garlic & herb seasoning, parsley, rosemary, and Goya spices, this whole chicken comes out juicy, golden, and bursting with flavor in every bite.

It’s an easy, crowd-pleasing dish perfect for Sunday dinner, meal prep, or feeding the whole family. If you’re looking for a no-fuss roasted chicken recipe that delivers big on flavor, this one’s for you.


Ingredients

  • 1 whole chicken (cleaned and patted dry)
  • 4 tablespoons butter, melted
  • 1 teaspoon onion powder
  • 1 tablespoon Weber Garlic & Herb seasoning
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon dried rosemary
  • ½ teaspoon Goya seasoning (or adobo)
  • Salt and pepper, to taste (optional)

Step-by-Step Instructions

Step 1: Make the Herb Butter

  • In a small bowl, combine:
    • Melted butter
    • Onion powder
    • Garlic & herb seasoning
    • Parsley flakes
    • Rosemary
    • Goya seasoning
  • Mix well to form a flavorful herb butter.

Step 2: Prep the Chicken

  • Preheat oven to 400°F.
  • Place the whole chicken in a roasting pan or baking dish.
  • Brush the herb butter generously all over the chicken, including under the skin if possible.
  • Pour any remaining mixture over the top of the chicken.

Step 3: Roast and Serve

  • Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the skin is golden and crispy.
  • Let rest for 10 minutes before carving.
  • Serve with your favorite sides—think mashed potatoes, green beans, or cornbread.
