Bring bold backyard BBQ flavor straight to your table with this Cowboy Baked Beans recipe. Loaded with hearty ground chuck, caramelized veggies, and smoky andouille sausage, this dish turns a classic side into a full-on main event. Whether you’re feeding a crowd or showing out at a potluck, this pan delivers big flavor, rich texture, and slow-cooked vibes—with minimal effort.

  • Medium nonstick pan
  • Knife
  • Slotted spoon
  • Spatula
  • Strainer
  • Large mixing bowl
  • Aluminum baking pan

Ingredients

  • 2 diced bell peppers (green, yellow, or red)
  • 8 oz diced white onions
  • 13 oz Cajun-style andouille sausages, sliced or diced
  • 2 cans baked beans (original & honey sweet)
  • 1 lb ground chuck
  • 3 tbsp garlic pepper
  • Salt, to taste
  • 1 cup brown sugar
  • 1.5 tbsp mustard
  • 2 tbsp BBQ sauce
  • 8 drops liquid smoke

Step-by-Step Instructions

Step 1: Prep the Oven

  • Preheat your oven to 400°F.

Step 2: Prep the Veggies & Sausage

  • Dice the bell peppers and onions.
  • Slice or dice the andouille sausages and set everything aside.

Step 3: Cook the Sausage

  • In a medium nonstick pan over medium-high heat, cook the sausage for 5–7 minutes, stirring occasionally.
  • Once browned, transfer to a bowl and set aside.

Step 4: Sauté the Vegetables

  • In the same pan, add bell peppers and onions.
  • Season with salt and 1 tbsp garlic pepper.
  • Stir occasionally and cook until softened and caramelized.

Step 5: Brown the Ground Chuck

  • Add the ground chuck to the pan with the veggies.
  • Break apart with a spoon and cook until browned.
  • Drain any excess grease and remove from heat.

Step 6: Combine the Mix

  • In a large aluminum baking pan, add the baked beans, cooked sausage, ground chuck, and sautéed veggies.
  • Gently fold together with a spatula until well combined.

Step 7: Season the Beans

  • Add 2 tbsp garlic pepper, salt, brown sugar, mustard, BBQ sauce, and liquid smoke.
  • Stir everything together thoroughly.

Step 8: Bake the Dish

  • Bake uncovered for 45 minutes.
  • Once done, stir and serve hot.
