Tender Cabbage Leaves Stuffed with Savory Goodness

These Napa Cabbage Rolls are a light yet satisfying twist on traditional stuffed rolls. Packed with juicy ground beef, tender mushrooms, sweet carrots, and red onion, they’re a comforting, wholesome dish that doesn’t skimp on flavor. Wrapped in Napa cabbage instead of rice or pasta, they’re also naturally gluten-free and versatile enough for dinner parties or weeknight meals.


Ingredients

  • 1 head Napa cabbage
  • 1 lb ground beef
  • ½ cup diced carrots
  • ½ cup diced mushrooms
  • ¼ cup diced red onion
  • Salt and pepper, to taste
  • Optional: soy sauce, garlic, or ginger for added seasoning

Step-by-Step Instructions

Step 1: Prep the Cabbage Leaves

  • Bring a large pot of water to a boil.
  • Gently peel whole leaves from the Napa cabbage and blanch in boiling water for 1–2 minutes until pliable.
  • Transfer to a bowl of ice water, then pat dry and set aside.

Step 2: Prepare the Filling

  • In a mixing bowl, combine ground beef, carrots, mushrooms, and red onion.
  • Season with salt and pepper. Add optional garlic, soy sauce, or ginger if desired.
  • Mix until evenly combined.

Step 3: Fill and Roll

  • Place a heaping spoonful of the meat mixture onto the base of each cabbage leaf.
  • Fold in the sides, then roll tightly from bottom to top to seal the filling inside.

Step 4: Cook the Rolls

  • Arrange the cabbage rolls seam-side down in a large skillet or baking dish.
  • Add ½ cup water or broth, cover, and simmer for 20–25 minutes over low heat or bake at 375°F for 30–35 minutes until cooked through.

Step 5: Serve

  • Serve warm with a dipping sauce or light drizzle of soy sauce.
