Ingredients
For the Chicken
- 1½ lbs boneless skinless chicken thighs or breasts
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 tsp garlic pepper
- 1 tsp Nature’s Seasoning (or your favorite all-purpose seasoning)
- 1 tbsp olive oil, for searing
For the Veggies
- 2 stalks crunchy celery, chopped
- 2 medium carrots, sliced
- 1 yellow onion, diced
- 1½ cups fresh Giorgio mushrooms, sliced
- 1–2 tbsp garlic paste
For the Herbs & Flavor
- 1 tsp rosemary
- 1 tsp thyme
- ½ tsp sage
For the Soup Base
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 4 cups chicken broth
- Reserved seasoning (same blend as on chicken)
- 1 cup uncooked white rice (or noodles, optional)
- 1½ cups heavy cream
Step-by-Step Instructions
1. Season & Sear the Chicken
- Season the chicken with oregano, smoked paprika, garlic pepper, and Nature’s Seasoning.
- Sear both sides in olive oil for 3–5 minutes and set aside.

2. Sauté the Veggies
- Add onions, carrots, and celery to the same pot and cook until soft.
- Stir in sliced mushrooms and garlic paste.

3. Build the Flavor Base
- Sprinkle in rosemary, thyme, and sage, allowing everything to cook down and release a rich, herby aroma.

4. Make the Roux
- Melt in butter and stir in flour to create a light roux that will thicken the soup.

5. Add Broth & Simmer Chicken
- Pour in chicken broth, re-season to taste.
- Return the chicken to the pot, and simmer for 10–12 minutes.

6. Add Rice & Cream
- Stir in uncooked rice and heavy cream.
- Simmer for another 10 minutes while shredding the chicken.

7. Shred, Stir & Serve
- Add the shredded chicken back into the pot, give it a good stir.
- Serve hot with your favorite garnishes.
