Ingredients

  • 3 pounds stewing beef, cubed
  • 1 teaspoon curry powder
  • Salt
  • White pepper
  • Salt
  • Crushed red pepper
  • 1 bay leaf
  • ¼ cup vegetable oil
  • 1 medium onion, sliced
  • 1 large ripe tomato, quartered
  • 1 large green bell pepper, diced
  • 2 cans cooked red kidney beans (optional)
  • 6 cups water
  • 3 cups uncooked long-grained rice

Instructions

  1. Season beef with curry powder, white pepper, salt, and crushed red pepper.
  2. Place in a Dutch oven. Add bay leaf and a small amount of water.
  3. Cook on low heat until the meat is tender.
  4. Place in a Dutch oven. Add heat until the meat is tender. Reserve stock.
  5. Heat oil in a skillet. Add meat.
  6. Brown on all sides. Remove meat. Strain oil.
  7. Wash and dry the skillet. Return oil to the same skillet.
  8. Add onion. Cook 5 minutes.
  9. Add tomato, green pepper, and kidney beans (if used). Cook 10 minutes. Add meat.
  10. Stir in the reserved stock and water. Reduce the heat slightly.
  11. Bring to a boil on high heat. Add rice. Cover medium.
  12. Cook, stirring once or twice, until rice is cooked as desired. Remove bay leaf before serving.

Yield: 4 to 6 servings
