The Ultimate Croque Madame: A Classic French Breakfast

The Croque Madame is a French bistro classic, a decadent twist on the traditional ham and cheese sandwich. What sets it apart? A luscious, creamy Mornay sauce, layers of melted cheese, savory ham, and the crowning glory—a runny fried egg on top. This dish is rich, comforting, and surprisingly easy to make at home. Perfect for brunch, a special breakfast, or even an indulgent dinner, this recipe is a surefire way to impress guests or simply treat yourself.

If you prefer to skip the egg, you’ll have a Croque Monsieur instead, which is just as delicious but slightly less rich. No matter which version you choose, you’re in for a delightfully cheesy, crisp, and satisfying meal.


Ingredients

For the Mornay Sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup heavy cream
  • ½ cup grated Parmesan
  • Salt & black pepper, to taste

For the Sandwich:

  • 4 slices of Tuscan bread
  • 2 tbsp butter
  • 2 tsp Dijon mustard
  • 4 slices of ham
  • 2 slices Havarti cheese
  • 2 slices Muenster cheese
  • 2 large eggs
  • Chopped chives, for garnish
  • Salt & pepper, to taste

Step-by-Step Instructions

Step 1: Prepare the Mornay Sauce

  1. In a saucepan over medium heat, melt the butter.
  2. Whisk in the flour and cook for about 1-2 minutes until slightly golden.
  3. Slowly pour in the heavy cream while whisking continuously.
  4. Once the sauce thickens, stir in the Parmesan cheese.
  5. Season with salt and pepper. Remove from heat and set aside.

Step 2: Assemble the Sandwich

  1. Toast the bread slices until golden brown.
  2. Spread Dijon mustard on two of the slices.
  3. Layer each with ham, followed by Havarti cheese.
  4. Add another slice of ham and top with Muenster cheese.
  5. Place the remaining slices of bread on top and press gently.

Step 3: Bake the Sandwich

  1. Preheat the oven to 350°F (175°C).
  2. Spread the Mornay sauce over the top of each sandwich.
  3. Bake for about 10 minutes until the cheese is melted and bubbly.

Step 4: Fry the Eggs

  1. In a pan over medium heat, melt butter and crack in the eggs.
  2. Fry until the whites are set but the yolks remain runny.
  3. Season with salt and pepper.

Step 5: Assemble and Serve

  1. Remove the sandwiches from the oven and place a fried egg on top of each.
  2. Garnish with freshly chopped chives.
  3. Serve immediately and enjoy!

The Croque Madame is the ultimate breakfast indulgence that’s both rich and satisfying. For an even crispier sandwich, you can butter and toast the bread in a skillet before assembling. If you prefer a bolder flavor, try adding a touch of nutmeg to your Mornay sauce or swapping the Havarti for Gruyère.

Pair it with a fresh salad or some crispy hash browns for a complete meal. Whether you’re hosting a brunch or just craving something extra special, this classic dish delivers on all levels.
