Southern Street Corn, But Make It Ribs
If you’re ready to turn up the flavor at your next cookout, corn ribs are the unexpected side dish that brings all the smoke, spice, and Southern charm. These Cajun Corn Ribs curl up just like ribs when grilled, delivering juicy, caramelized kernels with a bold butter-hot sauce blend.
But we’re not stopping there. Pair them with a cool, creamy buttermilk herb dip that brings tang, depth, and a whole lot of dipping satisfaction. Inspired by street corn, seasoned like your favorite wings, and dipped like they belong on a Southern platter—this one’s for the flavor lovers.

Ingredients
For the Corn Ribs:
- 4 ears of corn, husked and cleaned
- 2 tbsp butter, melted
- 1 clove garlic, finely minced
- 1 tbsp hot sauce
- 1 tbsp Cajun seasoning
For the Buttermilk Herb Dip:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp buttermilk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried dill
- 1 tbsp fresh chives, chopped
- 1/2 tsp Cajun seasoning
Step-by-Step Instructions
Step 1: Prep the Corn Ribs
- Carefully cut each corn cob into quarters lengthwise. This forms the “ribs.”
- Be cautious—the core is tough. Use a sharp knife and firm pressure.

Step 2: Mix the Cajun Butter
- In a small bowl, combine melted butter, garlic, hot sauce, and Cajun seasoning.
- Stir until well mixed.

Step 3: Season the Corn
- Brush the Cajun butter generously over the corn ribs, coating all sides.
Step 4: Grill the Corn Ribs
- Preheat your grill to medium-high.
- Place corn ribs on grill mats or foil to prevent burning.
- Grill for 10–15 minutes, turning occasionally, until they curl and char slightly.

Step 5: Make the Buttermilk Herb Dip
- In a bowl, mix together mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dill, chives, and Cajun seasoning.
- Stir until smooth and chill until ready to serve.
Step 6: Serve and Enjoy
- Plate the corn ribs hot off the grill.
- Serve with the chilled buttermilk herb dip on the side or drizzle over top.

Pro Tips & Serving Suggestions
- Use grill mats or foil: This prevents burning and keeps all that Cajun butter from dripping away.
- Go smoky: Add a pinch of smoked paprika or grill over charcoal for a smokier flavor.
- Make it creamy: Add crumbled cotija or feta on top for an elote-style twist.
- Double the dip: This sauce is perfect for fries, chicken tenders, or as a salad dressing too!
