This Cheesy Zucchini Breadwich is a game-changer for anyone looking to ditch traditional bread without sacrificing the soul of a good sandwich. It’s hearty, cheesy, crisp on the outside, and holds up like a champ.

Made with roasted zucchini strips layered between golden cheddar cheese, this “bread” has bite, structure, and a rich umami kick. It’s then stacked with Black folks’ sandwich staples like smoked turkey, beef bacon, crisp lettuce, red onions, and juicy tomato slices — all tied together with a peppercorn mayo that brings the heat and depth. It’s perfect for lunch, dinner, or even a show-off meal prep for the week.


What You Need (Ingredients)

For the Zucchini Breadwich Base:

  • 1 large zucchini, sliced thin lengthwise
  • 2 cups shredded cheddar cheese (divided)
  • ½ tsp garlic powder
  • Optional: ½ tsp smoked paprika

For the Filling:

  • ¼ cup peppercorn mayo (store-bought or homemade)
  • 4-6 slices smoked turkey breast
  • 4 slices beef bacon, cooked crispy
  • 1 small tomato, sliced
  • ¼ cup shredded lettuce
  • ¼ small red onion, thinly sliced

Step-by-Step Instructions

1. Prep the Zucchini
Using a mandoline or sharp knife, slice the zucchini lengthwise into thin strips. Place them on a paper towel and pat dry thoroughly to reduce moisture — this helps get that crispy finish.

2. Build Your Cheesy Bread Base
Preheat your oven to 400°F. Line a baking sheet with parchment paper. Sprinkle half of the shredded cheese into a rectangular shape (about the size of a sandwich slice). Layer the zucchini slices in a shingle-style overlap across the cheese rectangle. Sprinkle with garlic powder and smoked paprika (if using).

3. Bake It to Perfection
Add the rest of the cheese over the zucchini layer. Bake for 25 minutes or until the cheese is golden, bubbling, and the edges are crisped up. Let it cool slightly, then slice in half to form two “bread” pieces.

4. Assemble the Breadwich
Spread peppercorn mayo on both zucchini cheese “slices.” Start layering your sandwich with smoked turkey, beef bacon, shredded lettuce, tomato slices, and red onion rings.

5. Press, Slice, and Serve
Fold one half over the other, press lightly, and cut in half if desired. Serve warm or wrap it for later. This sandwich holds up well and can even be reheated briefly in a skillet or toaster oven for next-day eats.
