A Vibrant Jamaican Green Seasoning That Packs Flavor in Every Drop

In Caribbean kitchens, green seasoning is more than a condiment—it’s the foundation of flavor. This vibrant all-purpose blend brings together bold herbs, zesty citrus, and pungent aromatics into a fragrant paste that makes everything taste better. Whether you’re seasoning meat, marinating seafood, or flavoring up veggies, this homemade green seasoning turns your everyday dishes into something extraordinary.

Aldaine Oakley of @spicejamaica shares his take on this essential Jamaican kitchen staple. Made with fresh thyme, scallions, ginger, garlic, and a hint of lime, this blend delivers that unmistakable island taste—fiery, herbaceous, and soul-deep. You’ll never cook the same again after trying it.

Ingredients

  • 1 red bell pepper, chopped
  • 2 green bell peppers, chopped
  • 1 onion, peeled and quartered
  • 6 scallions (green onions), trimmed
  • 1 piece of fresh ginger (about 2 inches), peeled
  • 1 bunch fresh thyme
  • 1 bunch fresh parsley
  • 4 cloves garlic
  • Juice of 2 limes
  • ⅓ cup olive oil
  • Optional: 1 tbsp Spice Jamaica Reggae Blend (or your favorite Caribbean spice mix)

Step-by-Step Instructions

Step 1: Prep Your Ingredients

  • Wash and chop all vegetables and herbs into manageable chunks.
  • Peel the garlic and ginger.
  • Squeeze the lime juice and set aside.

Step 2: Blend It All Together

  • Add all ingredients into a high-speed blender or food processor:
    • Chopped bell peppers
    • Onion
    • Scallions
    • Ginger
    • Garlic
    • Thyme
    • Parsley
    • Lime juice
    • Olive oil
  • Optional: Add Spice Jamaica Reggae Blend for an extra kick of flavor.
  • Blend until smooth but slightly textured. You want a thick, spoonable paste.

Step 3: Store and Use

  • Transfer to a glass jar or an airtight container.
  • Store in the fridge for up to 1 week, or freeze in ice cube trays for longer shelf life.
  • Use to marinate chicken, fish, pork, tofu, or vegetables. Add to soups, stews, or even mix into rice for a bold Caribbean flavor.

Pro Tips and Serving Suggestions

  • Want it spicy? Add a Scotch bonnet pepper for a heat-forward version.
  • No fresh herbs? Sub with frozen or dried, but fresh is always best for flavor and aroma.
