Cube Steak with Gravy Is the Ultimate Comfort Meal
Some meals just take you home. They wrap you in memories, smell like Sunday dinners, and taste like love passed down through generations. Cube Steak with Onion Gravy is one of those meals. It’s the kind of dish that fills the house with warmth, the kind of meal you want to make when you need comfort, flavor, and a big dose of soul.
Unlike Salisbury steak—a hamburger patty pretending to be steak—cube steak is the real deal. It’s a tenderized cut of beef that soaks up every bit of seasoning and love you give it. This recipe, inspired by my grandma’s tried-and-true Southern cooking, slow-simmers cube steak in a rich, creamy onion gravy with a touch of Gravy Master for that extra layer of deep, umami flavor. Pair it with mashed potatoes or rice, and you’ve got a plate that speaks fluent comfort food.
Ingredients
4 cube steaks
1 cup all-purpose flour
Salt and pepper, to taste
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
2 tbsp vegetable oil
2 tbsp butter
1 large onion, sliced
2 tbsp flour (for gravy)
2 cups beef broth
½ cup heavy cream
1 tbsp Gravy Master (or Worcestershire sauce)
½ tsp dried thyme
½ tsp black pepper
Step-by-Step Instructions
Step 1: Season and Sear the Steak
Pat the cube steak dry with paper towels.
In a shallow dish, combine flour, salt, pepper, garlic powder, onion powder, and smoked paprika.
Dredge each cube steak in the seasoned flour, shaking off the excess.
Heat the vegetable oil in a large skillet over medium-high heat.
Sear each steak for 2–3 minutes on each side until golden brown. Remove and set aside.
Step 2: Make the Onion Gravy
In the same pan, melt the butter and add the sliced onions.
Sauté until soft and slightly caramelized.
Sprinkle in 2 tablespoons of flour and stir continuously to form a roux.
Gradually pour in the beef broth while stirring to avoid lumps.
Stir in the heavy cream, Gravy Master, dried thyme, and black pepper.
Step 3: Slow Cook for Maximum Tenderness
Return the seared cube steaks to the skillet, fully covering them with the gravy.
Lower the heat to a gentle simmer, cover the pan, and cook for 1 hour and 30 minutes.
Halfway through, baste the steaks with the gravy to deepen flavor.
Continue simmering until the meat is fork-tender and richly flavored.
Step 4: Serve and Savor
Plate each cube steak with a generous pour of the rich onion gravy.
Serve alongside mashed potatoes, white rice, or buttery biscuits.
Garnish with fresh parsley for a pop of color and freshness.
Pro Tips and Serving Suggestions
Cook Low and Slow: The key to tender cube steak is patience. Simmering on low heat lets the flavors deepen and the meat melt.
Use Gravy Master: This isn’t just any gravy—Gravy Master adds a savory punch that transforms the entire dish. If you don’t have it, Worcestershire sauce works in a pinch.
Adjust the Gravy: If the gravy thickens too much during cooking, add a little more beef broth to loosen it back up.
Even Better the Next Day: Like most comfort foods, this dish gets even more flavorful after sitting overnight. Store leftovers in an airtight container for up to 3 days.
This is more than a recipe—it’s a reminder that food can be soul medicine. Cube steak with onion gravy is the kind of dish that calls you to slow down, sit at the table, and savor what matters most: good food and good memories.
