Savory Pancake Tacos Are the Brunch Remix You Didn’t Know You Needed

Move over breakfast burritos—Pancake Tacos are taking over! These crispy-edged buttery pancakes act as the soft taco shell for a mouthwatering brunch filling: cheesy scrambled eggs, Cajun beef sausage with peppers & onions, and a smooth creamy Cajun sauce on top. All of this brought together with a touch of maple syrup for that perfect sweet-and-savory finish.

Ingredients

For the Pancake Taco Shells:

  • Pancake mix (or homemade batter)

Step-by-Step Instructions

1. Make the Pancake Taco Shells

  • Mix your pancake batter and heat a skillet with butter over medium-low heat.
  • Pour a small amount of batter and spread slightly—keep them medium-sized like a taco.
  • Let the edges crisp up until golden, then flip and finish cooking.
  • Keep warm and soft (not folded yet) until ready to assemble.

2. Cook the Cajun Sausage

  • In a skillet, heat olive oil or butter.
  • Sauté sliced sausage, onions, and peppers with a generous sprinkle of Cajun seasoning.
  • Cook until browned and aromatic. Set aside.

3. Make the Cheesy Eggs

4. Make the Creamy Cajun Sauce
