The Softest Biscuits You’ll Ever Make—With a Sweet Southern Glaze

These Honey Butter Biscuits are more than a side—they’re a whole moment. Soft, flaky, buttery, and finished with a sweet honey glaze, they deliver Southern comfort in every bite. Whether you’re serving them for brunch, alongside fried chicken, or as the base for a breakfast sandwich, these biscuits are the kind of recipe that make you feel like you’ve got a little bit of home in every bite.

The secret? Frozen grated butter for those tender layers, a gentle touch when mixing, and a final honey-butter bath that takes them over the top. Make a double batch—you’ll want extras.


Ingredients

For the Biscuits:

  • 4 cups all-purpose flour
  • 12 tablespoons unsalted butter, frozen and grated
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 2 cups very cold buttermilk

For the Honey Butter:

  • 4 tablespoons butter
  • 2 tablespoons honey

Step-by-Step Instructions

Step 1: Mix the Dough

  1. Combine the dry ingredients. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  2. Add the butter. Mix in the frozen grated butter until it’s evenly distributed throughout the flour.
  3. Add honey and buttermilk. Stir in the honey, then gradually add the buttermilk until a shaggy dough forms. You may not need all 2 cups—go by texture.

Step 2: Shape and Cut

  1. Knead lightly. Turn the shaggy dough out onto a lightly floured surface. Gently knead until it forms a cohesive ball.
  2. Roll and fold. Roll the dough out about 1 inch thick, fold it over like an envelope, then roll into a 3–4 inch thick square.
  3. Cut biscuits. Use a floured biscuit cutter to cut out 8–10 biscuits. Dip the cutter in flour between cuts to prevent sticking.

Step 3: Chill and Bake

  1. Freeze briefly. Place the cut biscuits on a baking sheet and freeze for 20 minutes.
  2. Preheat oven. While biscuits chill, preheat the oven to 400°F (205°C).
  3. Bake. Bake biscuits for 25–30 minutes, until golden brown and baked through.

Step 4: Make and Apply Honey Butter

  1. Melt butter and honey. In a small microwave-safe bowl, melt butter and honey together (about 30 seconds).
  2. Baste. Remove biscuits from the oven and brush generously with honey butter.
  3. Optional second bake. Return to the oven for 5 more minutes, then baste again when they come out.
